Very Healthy Curried Brussel Sprouts

Brussels sprout Curry
Ing:
1 pound fresh Brussels sprouts cleaned and stem cut
3 to 4 fresh Tomatoes cubed in small pieces
1 small Onion finely chopped
1 tbsp Tomato paste
4 to 5 Curry leaves
1 tsp Turmeric
1 tsp Cumin powder
1/2 tsp Mustard Seeds
Salt to taste
2 tbsp Olive Oil
Cayenne Powder (per your taste)
Method:
In a saucepan heat olive oil and add the mustard seeds and curry leaves, once the mustard seeds pop add the onions let fry till translucent than add the tomatoes, once the tomatoes get soft add the spices and brussels sprouts stir and cover let cook until brussels sprouts reaches desired softness, before serving squeeze half a lemon and top with fresh cilantro..... and enjoy!!!!
