Greetings! Let's make some almond shortbread! This is a delicious twist on a traditional butter shortbread with the addition of some almond flour and some really good quality almond extract. I am not kidding when I tell you that these cookies disappeared fast in my house!
These are quick and delicious. I tried to put the dough through a pastry bag fitted with a large star tip, but the dough was ever so slightly too stiff for that application. I went and got my Sawa 3000 cookie press and we were in business. When you use a cookie press, make sure not to use parchment. The dough does not like to stick to the parchment and if you have a nice clean cookie sheet you will have no problem.
You don't have to use a cookie press, you could simply roll the dough into small balls, dip a juice glass in some sugar and flatten the ball for a nice rustic round shortbread cookie. How ever you do it, these are going to be delicious!
