This soya burger is extremely nutritious as soya is packed with protein and rich in fiber. A recipe you can enjoy without much guilt, this dish is a must try!
SOYA BURGER
Ingredients
1 cup soya granules, soaked in warm water
4 brown bread buns
5 tbsps olive oil
2 medium onions, chopped
2 medium onions, cut into round slices
Salt to taste
2 green chillies, chopped
1½ tsp red chilli powder
1 tbsp whole wheat flour (atta)
2 medium potatoes, boiled, peeled and mashed
¼ cup brown breadcrumbs
3 tbsps refined flour (maida)
4 tsps tomato ketchup
4 tsps mustard paste
A few iceberg lettuce leaves
2 medium tomatoes, cut into round slices
Crushed black peppercorns, as required
Method
1. Heat 2 tbsps olive oil in a non-stick pan and 1 tbsp oil in another non-stick pan.
2. Add chopped onions to the first pan and saute till lightly coloured.
3. Add onion slices to the other pan and saute. Sprinkle a little salt on the onion slices.
4. Add soya granules to the first pan and saute. Add green chillies and ½ tsp red chilli powder and mix. Add salt and whole wheat flour and mix. Saute for 2-3 minutes.
5. When the onion slices caramelize, transfer them into a bowl.
6. Put soya mixture into a big bowl. Add mashed potato, brown breadcrumbs and mix well.
7. Heat 1 tbsp olive oil in another non-stick pan. Halve the brown bread buns and grill them in this pan.
8. Divide soya mixture into 4 equal portions and shape them into tikkis to suit the diameter of the buns.
9. Spread refined flour in a plate, add 1 tsp red chilli powder and salt and mix well.
10. Remove the buns from the pan and set aside.
11. Roll the soya tikkis in the spiced flour. Heat 1 tbsp olive oil in a non-stick pan, place the tikkis in the pan and cook, turning sides, till both sides are evenly golden and crisp.
12. Apply some tomato ketchup and mustard paste on the lower halves of the buns. Tear a few iceberg lettuce leaves and place over the lower halves. Sprinkle salt and crushed peppercorns and place the halves on a serving plate.
13. Place a soya tikki on each, top with caramelized onions, cover the top half of the buns and serve immediately.
