A traditional Punjabi starter which can be made from leftover ingredients and it still tastes utterly delicious, this is a go to dish!
LEFTOVER RAJMA TIKKI
Ingredients
1 cup leftover rajma masala
2-3 brown bread slices
10-12 fresh mint leaves
Salt to taste
ΒΌ tsp red chilli powder
3 medium potatoes, boiled, peeled and mashed
1 medium onion, finely chopped
Oil to shallow fry
For garnish
1 medium onion, cut into rings
A few iceberg lettuce leaves
Few thin strips of red capsicum
Pickle, as required
Method
1. Strain the gravy from the rajma masala and put the rajma into a processor jar.
2. Add broken brown bread slices, fresh mint leaves, salt and red chilli powder and process.
3. Place mashed potatoes in a bowl and add the rajma mixture to it and mix well. Add onion and mix well.
4. Heat sufficient oil in a non-stick pan. Shape the mixture into equal sized tikkis and shallow fry, turning sides, till evenly done and crisp on both sides.
5. Garnish with onion rings, iceberg lettuce, thin strips of red capsicum and serve hot with pickles.
