Smoked Bar-B-Q Meat Loaf!
In a very large bowl put:
2 lbs. of 80/20 ground beef
1 lb. ground pork
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped red bell pepper
1/4 cup finely chopped celery
1/2 cup finely chopped (mix of green and sweet onions)
1 heaping tbsp. minced garlic
1/2 cup finely chopped mushrooms
1 heaping tbsp. bar-b-q seasoning
1 tsp. diced jalapeno peppers (optional)
1/2 tsp. salt
1 tsp. black pepper
1/2 cup Mexican blend shredded cheese
1 cup bread crumbs (your choice what kind)
2 eggs beaten
1/2 cup half and half
Mix just until evenly incorporated
Divide into 2 loafs and put them in the frig for 2 hours.
Put them on a rack and cook in your smoker at 275 to 300
until internal temperature hits 150 degrees.
Cover the top with bar-b-q sauce and cook until internal temp
is 160 degrees.
Let rest for 20 to 30 minutes. Slice thick and enjoy!
