PANEER SHAWARMA
Ingredients
400 grams cottage cheese, cut into ½ thick slices
4 brown pita breads
2 teaspoons chopped garlic
A pinch green cardamom powder
Salt to taste
1 teaspoon malt vinegar
Juice of ½ lemon
2 teaspoons olive oil
1 medium onion, peeled
½ small iceberg lettuce
1 medium tomato, deseeded and sliced
2-3 pickled jalapenos, sliced
Spice mix
1 teaspoon fennel seeds
1 teaspoon dried ginger powder
3-4 cloves
3-4 black peppercorns
¼ teaspoon fenugreek seeds
1 inch cinnamon
1 star anise
1 teaspoon cumin seeds
A pinch nutmeg powder
Yogurt sauce
½ cup yogurt
1 tablespoon tahini
1 teaspoon garlic paste
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh mint leaves
Salt to taste
Crushed black peppercorns to taste
Juice of ½ lemon
Method
1. To prepare spice mix, grind together fennel seeds, dried ginger powder, cloves, black peppercorns, fenugreek seeds, broken cinnamon, star anise, cumin seeds and nutmeg powder to make a fine powder.
2. To prepare marinade, take yogurt in a bowl. Add chopped garlic, cardamom powder, ½ teaspoon spice mix, salt, malt vinegar, lemon juice and 1 teaspoon olive oil and whisk well.
3. Place cottage cheese slices on a plate. Spread the marinade on both sides of cottage cheese and set aside for 5-10 minutes.
4. To prepare yogurt sauce, take yogurt in a bowl. Add tahini, garlic paste, parsley, mint leaves, salt, crushed peppercorns and lemon juice and whisk well.
5. Halve pita breads and slit with one side intact to make pockets.
6. Heat remaining olive oil in a non-stick pan. Place marinated cottage cheese slices and sear from both sides till golden brown. Transfer on the worktop, slightly cool and roughly chop. Transfer in another bowl.
7. Halve and slice onion. Shred iceberg lettuce.
8. Put some yogurt sauce, shredded iceberg lettuce, chopped cottage cheese mixture, some sliced onions, tomato slices and few jalapenos slices inside each pita pocket.
9. Serve immediately.
