Coconut Haupia Tiramisu Recipe:
2 tbsp cocoa powder
2 tsp sugar
1 cup boiling water
Mix together into a bowl, set the hot chocolate aside. This will be our dipping liquid for the ladyfingers
Chocolate Pudding:
3 oz. (7 squares) dark chocolate, finely chopped
3/4 cup hot coconut milk (full fat)
Allow the chocolate to melt.
Whip into a pudding
Coconut Cream layer:
I box chilled Kara creme de coco
Whip with hand mixer into soft peaks form
Add 1 container (8 oz) mascarpone cheese, room temp
2 tbsp sugar
1 tsp vanilla
Mix again into a silky cream
To assemble use an 8x8 inch pan
1 1/2 packages of ladyfingers
Dip the ladyfingers into the hot chocolate and lay out in the pan. Add a layer of chocolate followed by a layer of the coconut cream. Repeat another layer, chill 4 hours to set. Dust with cocoa powder before serving.
