Delicious Swedish Meatballs! (Don't forget the Lingonberry Jam)
You will need 1 lb. of ground beef and 1 lb. of ground pork
25/75 lean Pork & Beef makes great meatballs)
In a large frying pan melt:
1 tbsp. butter and saute 1/2 of a sweet onion finely diced on medium heat until soft. Place those onions in a large bowl.
Now add with the onions:
1/8 to 1/4 cup of milk
2 whole eggs
1/3 cup of plain bread crumbs
Whisk that all together...
Then add:
A splash of Worcestershire Sauce
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. allspice
1/4 tsp. ground nutmeg
1/8 tsp. cayenne pepper
Whisk that all together....
Now add the 1 lb. of ground beef and 1 lb. of ground pork
Mix well and cover with plastic wrap and refrigerate for 1 hour.
Take a small scoop and form the meat into equally sizes. Then!
Wet your hands with cold water and roll the meatballs up.
Put the meatballs on a cookie sheet and bake at 400 degrees
for 25 to 30 minutes. While they are baking make your gravy!
Now make the gravy:
In the same pan you used to soften the onions... put 3 tbsp.
of butter and 3 tbsp. regular flour. Whisk on medium heat for
about 5 minutes... then add beef stock.
Add a little at a time and keep stirring and adding stock until the gravy is a bit thinner than regular gravy. Salt and Pepper to taste!
Then add 1/4 cup sour cream, a splash of Worcestershire sauce
a touch of heavy cream and 1/2 tsp. sugar. Simmer for 3 minutes
then turn down to low until the meatballs are down.
When the meatballs are back from the oven put them in the gravy
and simmer the meatballs in the gravy for 5 to 7 minutes.
Serve on a bed of egg noodles along with petite gold potatoes
and a small dish of Lingonberry Jam. Drizzle butter on the taters
and sprinkle on some dill or chives.
