Homemade Vegetable Soup. Suitable For Vegetarians & Vegans. Perfect healthy veg soup for those cold nights.
What You Need:
Potatoes, Carrots, Broccoli, Cauliflower, Leeks, Ginger, Garlic
2 tbsp Olive oil or Butter
1 or 2 LEEKS rinsed and finely chopped, white and light green parts only
Ginger finely chopped
2 cloves garlic, Finely chopped or minced
salt and pepper/All-Purpose Seasoning to taste
In a large Pot, heat water over medium-high heat.
Add Potatoes and carrots boil until they begin to soften.
Add garlic and Ginger for another minute.
Add Broccoli & Cauliflower after 10mins
Reduce heat to low and simmer for about 5 minutes.
Wait till it cools down to blend to avoid splashes
Puree soup with blender in batches
To serve Garnish soup with chopped parsley or Goji berries in Olive oil
For The Leftovers - Store in the refrigerator for up to 4,5 days.
