Soft and moist eggless dates and walnut cake which taste so yummy and with a cup of chai makes it all worth a try. Try out this easy cake recipe.
DATE AND WALNUT CAKE – NO EGG
Ingredients
1 cup chopped dates
¾ cup toasted and chopped walnuts
2 cups refined flour (maida) + for dusting
1 cup milk, warm
1 tsp instant coffee powder
1 tsp baking powder
½ tsp baking soda
A pinch salt
1 cup melted butter + for greasing
¾ cup brown sugar
1 tsp vanilla essence
¾ cup buttermilk
Icing sugar for dusting
Method
1. Preheat oven to 180º C. Grease a cake tin with some butter and dust with some flour.
2. Put dates in a bowl, add milk and coffee powder and mix.
3. Sift together refined flour, baking powder, baking soda and salt into another bowl and mix well.
4. Add butter and brown sugar and mix well. Add vanilla essence and walnuts and mix.
5. Add date mixture and mix well. Add buttermilk and mix till well blended into a batter.
6. Pour batter into prepared tin, tap a little and place in the preheated oven. Bake for 45 minutes.
7. Remove tin from oven and cool cake down to room temperature. Remove cake from tin, dust with icing sugar and serve.
